New Year’s Italian Wedding Soup

  • Meatballs

  • 2 lbs ground meat

  • 1 lb pork

  • mix together with 1 Tablespoon garlic

  • 1 Tablespoon Italian seasoning

  • 1 teaspoon Red Chile pepper flakes

  • 1/2 cup mozzarella

  • form into balls and cook in a pan with 1 Tablespoon butter
    SOUP:

  • 2 tablespoons good olive oil

  • 1 Tablespoon unsalted butter

  • 2 Tablespoons garlic paste

  • 1 cup minced yellow onion

  • 1 cup diced carrots, about 3 carrots, cut into 1/4 inch pieces

  • 10 cups chicken stock

  • 1 cup small pasta

  • 1/4 cup minced fresh dill

  • 12 ounces baby spinach, washed and trimmed

  • 1 cup Parmesan

  • Mix all together in a large soup pot

  • add meatballs and enjoy with a little extra Parmesan on top!

I absolutely love making traditions and memories in my kitchen with my kids. This New Years we are starting a new traction with a comfort soup with delicious broth filled with flavor. My favorite part of this recipe are the home made meatballs. This soup is even better the next day.
